  • 2 lbs chicken
  • 2 cups natural peanut butter
  • 1 onion chopped
  • 4 tomatoes blended
  • 2 cloves garlic
  • 1- inch ginger
  • 2 tablespoons tomato paste
  • 6 cups chicken stock
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Black pepper
  • 1 teaspoon seasoning powder
  • For the Fufu
  • 2 cups cassava flour
  • 2 cups water

Method
 

  1. Season the chicken with salt, pepper, thyme, and seasoning powder. Cook until tender.
  2. Blend tomatoes, onion, garlic, and ginger until smooth.
  3. Heat oil in a large pot and cook the blended mixture for 15 minutes.
  4. Stir in tomato paste and cook for another 5 minutes.
  5. Add chicken stock and blend peanut butter in a separate pot stirring until smooth for 20 minutes
  6. Return the cooked chicken to the soup and simmer for 30 minutes.
  7. In a separate pot, gradually mix cassava flour into boiling water while stirring continuously until smooth and stretchy.
  8. Shape the fufu into balls and serve hot with the groundnut soup.
